Charred Pineapple Mezcal Margarita
Ingredients
- 2 oz Mezcal
- 1 oz Fresh Lime Juice
- 0.5 oz Agave Nectar
- 2 slices Fresh Pineapple, charred
- Pineapple wedge or wheel for garnish
- Lime wheel for garnish
- Smoked sea salt for rim
Instructions
- Preheat a grill pan and lightly char the pineapple slices on each side (about 2 minutes per side).
- Rub the rim of a rocks glass with a lime wedge and dip the rim in smoked sea salt.
- Add charred pineapple, mezcal, fresh lime juice, and agave nectar to a shaker filled with ice.
- Shake vigorously for 15 seconds to properly integrate the flavors.
- Strain the mixture into the prepared glass over fresh ice.
- Garnish with a pineapple wedge or wheel and a lime wheel.
